Jazz up a Summer Salad
A salad doesn’t have to be boring to be healthy. Jazz up a summer salad with herbs, vegetables and edible flowers in season to create a beautiful dish to add to your meal.
This salad has herbs like basil, cilantro, lemon thyme and parsley, as well as nasturtiums which impart a peppery flavor added to the typical lettuce, tomato, onion and red pepper combo.
Finish your salad off with a zippy homemade dressing and you have a bright, easy way to eat your vegetables.
Dijon Vinaigrette
Makes: 1 serving
Ingredients:
· 1 tsp Dijon mustard (I like Grey Poupon)
· ¼ c fresh lemon juice
· salt & pepper to taste
· 2 tbsp olive oil
Instructions:
1. Add Dijon mustard, lemon juice, salt & pepper to a bowl.
2. Whisk together.
3. While continuing to whisk, slowly drizzle in oil until well incorporated.
4. Add to salad, toss to coat.
