Sweet Treat Cheat! Sugar-Free Strawberry Coconut Popsicles

Want a sweet summer treat that you don’t have to feel guilty about? I call these Strawberry Coconut Popsicles my Sweet Treat Cheat, because they are rich, and fruity, but offer guilt-free satisfaction.

Back to my Strawberry Coconut Popsicles. They’re made with coconut milk, rich in heart healthy lauric acid, and the important minerals magnesium, potassium, iron and phosphorus. And strawberries are high in vitamin C, manganese, copper and folate.  Lastly, they contain liquid stevia, a plant-based calorie-free sweetener. Stevia, thought to be 250 – 300 times sweeter than sugar, doesn’t impact your glycemic load or trigger an insulin response.

Strawberry Coconut Popsicles
Makes 6 popsicles

Ingredients:
1 can (13.5 oz) full fat organic coconut milk
1 cup organic strawberries (or fruit of your choosing.)
6 drops liquid Stevia
1 teaspoon vanilla extract

Instructions:
1. Add all ingredients into the blender and mix until just blended.
2. Pour into popsicle molds.
3. Freeze for at least 4 hours. Remove from molds and enjoy!!
